Ohhhh, Heirloom tomatoes, I love you from my head to-ma-toes 😉 You are so sweet and beautiful, sliced up with a drizzle of olive oil, a pinch of sea salt, a twist of black pepper.. but let us go a step further.

When my Heirloom tomato beauts arrived, I couldn’t decide, a simple bruschetta or go all out with a slow-roasted tomato and goats cheese terrine?.. so I asked you lovely people and the winner’s hands down with 98% was the bruschetta!! (much to my kids’ excitement!).

Perfect on a sunny day like today.. the crunch of the toasted bread with the sweet basil tomatoes. All I need now is my crisp, chilled glass of Chardonnay.

Instructions

  1. Slice bread on the diagonal about an inch thick. Brush the bread slices liberally with olive oil on both sides, sprinkle with sea salt and toast in the oven until crisp.
  2. Mix tomatoes with all other ingredients. Jazz up with whatever you like..
  3. I did 4 different different versions in the pic, homemade wild garlic pesto, goats cheese, avocado and simply just on its own drizzled with thick balsamic (which got the vote as the best one in our house!)
