CRUNCHY SPICY THAI PEANUTY WONON TACOS

Ingredients

  • 300g Minced Turkey or Chicken
  • 20 Wonton Wrappers
  • Cooking oil
  • 3.5 tbsp Peanut butter
  • 3 tbsp Brewed black tea
  • 3 tbsp Rice vinegar
  • 2 tbsp Soya sauce
  • 2 tsp Chilli sauce
  • 1 tbsp Ginger, minced
  • 2 tsp Honey
  • 0.5  tsp Sesame oil
  • 0.5 tsp Chilli flakes (adjust according to taste)
  • Sea salt flakes
  • 2 Spring onions, sliced in thin rounds
  • Handful of grated Mozzarella (optional)
  • 1 Carrot, grated
  • Small bunch Coriander, chopped
  • 2 tbsp Toasted sesame seeds
  • GARNISH: Sliced red chilli, lime wedges

Instructions

  1. Pre-heat oven to 200C
  2. Spray wonton wrappers with oil, drape as many as your can over the side of a large slanted baking dish (I used a pie dish)
  3. Bake for about 10 minutes until golden and crisp, repeat with all the wonton wrappers, set aside
  4. Blitz peanut butter, tea, rice vinegar, soya, chilli oil, ginger, honey and sesame oil in a blender, set aside
  5. Season turkey with chilli sauce and salt, sauté in pan with a little oil until cooked, set aside
  6. Coat mince thoroughly with the peanut sauce and stuff into the wonton shells
  7. Arrange the shells into a baking dish
  8. Top with mozzarella cheese (if using) and bake in the oven until the cheese is melted
  9. Remove dish from the oven, top with gtated carrots, coriander, spring onions and sprinkle with sesame seeds
  10. Enjoy!
