MEXICAN CHOPPED SALAD

A quick throw together salad made with veggies you most likely already have in your fridge and a few larder ingredients… this tangy and vibrant salad would make a perfect lunch or side for a BBQ or grilled fish or meat.

MEXICAN CHOPPED SALAD

Ingredients

  • Black beans, from a tin or jar, drained and rinsed
  • 2 Peppers (red, yellow or orange), diced small
  • 1 head Romaine lettuce, shredded
  • 150g Cherry tomatoes, quartered (or 2 tomatoes diced small)
  • 1 tin Sweetcorn, drained
  • 1 Avocado, diced
  • Jalapeños, (fresh one sliced or jarred ones chopped)
  • Handful of radishes (optional), sliced thin
  • Large handful fresh Coriander, chopped roughly
  • .
  • DRESSING
  • 1 Lime, zest finely chopped and juiced
  • 2 tbsp Olive oil
  • 2 Garlic cloves, crushed
  • 1 tsp Cumin powder
  • 1 tsp Sea salt flakes
  • 0.5 tsp Pepper, freshly ground

Instructions

1. Add all the salad ingredients to a large serving bowl, set aside
2. Add all the dressing ingredients to a measuring jug and whisk till combined well
3. Pour the dressing over the salad once ready to serve
4. Enjoy!
