Up your stuffing game by adding some FLAVVVVA AND SPICE to that sausage meat! This stuffing loaf goes gorgeously with my Masala injected Turkey (recipe to follow soon). Still, it would also work wonderfully with any roast to give you some extra oomph, especially if you cook a relatively light roast for the kiddos!

This gorgeous savoury, buttery, spiced loaf is loaded with juicy sausage, dried cranberries and fusion flavours which give you the BEST Sausage Stuffing EVER!  Pile it high and hope you are the first one back in line for seconds before it all disappears! 🤣

Ingredients

  • 12 Pork Sausages - I used caramelised onion (800g)
  • 0.5 tbsp Ginger, minced
  • 0.5 tbsp Garlic, minced
  • 1 tbsp Maggie liquid seasoning
  • 0.5 tbsp Shaoxing wine
  • 1 tsp Rice Vinegar
  • 1 tsp Worcestershire sauce
  • 1 tsp Soya sauce
  • 0.5 tsp Chilli powder @ramanspiceuk
  • 0.5 tsp Sugar
  • 3/4 tsp Cumin powder @ramanspiceuk
  • 3/4 tsp Coriander powder @ramanspiceuk
  • 50g Dried Cranberries
  • 50g Panko breadcrumbs
  • 12 Streaky smoked bacon rashers

Instructions

  1. Preheat the oven to 180C/360F
  2. Squeeze the sausage meat from the sausage skins and place into a large bowl
  3. Add all the other ingredients to the bowl except the bacon, and using your hands, give it all a perfect mix until you have a smooth mixture that holds together well.
  4. Mould the sausage meat into a loaf shape and place it onto a lined oven tray
  5. Carefully lay each slice of bacon around the sausage meat in a row overlapping a little, keeping the bacon's fat side exposed and covering the entire loaf.
  6. Bake in the oven for about 40 minutes, then turn the oven up to 250C for another 10 minutes to crisp up the bacon and cook until the internal temperature is 72C/160F. Cover loosely with foil if starting to burn
  7. Cut the loaf into slices and serve alongside your roast
  8. Enjoy!
