SALMON SPINACH & BOURSIN CHEESE CREPE BAKE

Flaky fresh salmon, vibrant spinach goodness, leeks, garlicky creamy cheese, tangy lemon, black pepper and a hint of chilli… all wrapped up in soft, tender crêpes and baked to cheesy, golden, bubbling perfection.

SALMON SPINACH & BOURSIN CHEESE CREPE BAKE

Ingredients

  • 200g Spinach
  • Extra virgin olive oil
  • 2 Leeks, medium size, chopped fine
  • 300g/ 2 x Garlic & herb Boursin cheese @boursinuk
  • 3 tbsp Cream cheese @philadelphia_uki
  • 120ml Stock @takestockfoods
  • 4 Salmon fillets, cooked and flaked with a fork
  • 0.5 Lemon, juiced
  • Crushed red chilli flakes
  • Sea salt flakes and ground black pepper
  • 75g Mature cheddar cheese, grated
  • 50g Parmesan cheese, grated

Instructions

1. Pre-heat the oven to 180C
2. Microwave or blanch the spinach for 2 mins to wilt, when cool enough to handle, squeeze out as much liquid as you can, then roughly chop and set aside
3. Sauté the leeks in olive oil on medium heat until soft
4. Add the Boursin cheese and cream cheese, stir until melted then pour in the stock to loosen, continue to cook for another minute until heated through
5. Add in the chopped spinach, flaked salmon and lemon juice
6. Season to taste with chilli flakes, salt and pepper
7. Brush the rectangular oven proof dish with olive oil then assemble the bake by filling equal amounts of the filling into each crêpe and rolling them up, pack them tightly into the dish
8. Scatter over the grated cheeses and finish with a final grinding of black pepper
9. Bake in the oven until the cheese has melted and it’s golden and bubbling
10. Let the bake rest for 5 minutes before serving
