I got some leftover roast chicken or pulled pork and want to make something quick and easy?… these tortilla cups made in muffins tins are so perfect and get so crispy… filled with a garlicky chipotle chicken and guacamole, they went down a storm with the whole fam!

Ingredients

  • 12 Flour Tortillas
  • Cooking oil
  • 4 chicken breasts (or leftover roast chicken/ pulled pork)
  • 6 Chipotles in Adobo sauce (half this if you don’t like it spicy)
  • 1 Tin chopped tomatoes
  • 6 Garlic cloves crushed
  • 1 tsp Onion powder
  • 1.5 tsp Cumin Powder
  • 1 tsp dried oregano
  • 1 tbsp Honey
  • 1 tsp Salt
  • Freshly ground black pepper
  • GUACAMOLE
  • 2 Avocados cut into small squares
  • 1 tomato deseeded and diced small
  • 2 Spring onions chopped fine
  • Handful coriander chopped
  • 1 Chilli chopped fine
  • 1 Lime juiced
  • Salt & Pepper
  • OPTIONAL TOPPINGS
  • Grated Red Leicester cheese, fresh coriander, spring onions, jalapeños, lime wedges, sour cream

Instructions

  1. Pre-heat oven to 200°C
  2. Heat each tortilla for 15 seconds in the microwave, brush with a little oil and shape it into a mini cake mould or muffin tin.
  3. Bake in the oven for 5 mins until starting to crisp, set aside
  4. Blitz all chicken marinade ingredients in a food processor, place in an oven dish with the chicken, cover with foil and bake for an hour until cooked, set aside
  5. Remove chicken from oven dish, shred and set aside
  6. Place any remaining sauce in a bowl and mix desired quantity into shredded chicken
  7. If using cooked shredded chicken or pork, then heat in the oven with the blitzed sauce for about 20 minutes
  8. Mix all guacamole ingredients in a bowl, taste and adjust seasoning to your liking, set aside
  9. Add hot shredded chicken into cups, top with grated cheese, place back in the oven until cheese melts
  10. Remove from oven, place in serving dish, top with desired toppings: guacamole, salsa, sour cream, coriander, jalapeños, spring onions, a squeeze of lime 
  11. Enjoy!
