The Ultimate Fried rice

Everyone loves fried rice.  The ultimate quick dinner using up veggies lying at the back of the fridge or leftover meat, super quick, delicious, and a one-pan wonder!  

Most people have their own version of making it, but you can’t beat restaurant-style fried rice!!  It is easy to follow the right steps; everything is cooked in the same wok but at different times, removed from the wok, then added back in with the rice.  Follow my simple steps to making unbelievably delicious fried rice, and you will never look back!

Ingredients

  • Cooking oil
  • 800g cooked rice (day old is good)
  • 400g chicken, duck, pork, prawns (I used a mix of duck, pork, and prawn)
  • 1 egg white
  • 4 tsps Cornflour
  • 1 tbsp Shaoxing wine – Chinese cooking wine
  • 3 Eggs – large
  • 1 Onion chopped fine
  • 4 Garlic cloves crushed
  • 2 Carrots peeled and blitzed in a food processor
  • 100g Green bean chopped in fine rounds
  • 4 Spring onions chopped fine
  • 2 tbsp Soya Sauce
  • ½ tsp Sesame oil
  • 1 tsp Sugar
  • White pepper
  • Salt

Instructions

  1. Mix the egg white, cornflour, Chinese wine, 1 tsp of oil, and salt pinch in a bowl.
  2. Divide this mixture into 2 if you are using 2 types of protein or 3. If using 3 types, add the meat/ prawns to each bowl and marinate for about 20 minutes
  3. In a wok or wide pan, add oil and sauté the meat/ prawns separately until slightly browned, remove and drain on kitchen towels.
  4. Wipe down your wok, turn the heat up to high and add 1 tbsp oil, add the eggs and cook, scrambling them up, remove them from the pan in another dish, set aside
  5. Wipe down the wok again and add 1 tbsp oil and sauté the garlic and onions for a couple of minutes until cooked and soft, remove from pan and set aside 
  6. Wipe down the wok again and heat until very hot, add a tablespoon of oil and add the rice, spread it all over the surface of the wok and leave for a minute to sizzle, then turn the rice around and do the same for another minute or two
  7. Mix soya sauce, sesame oil, and sugar well in a small bowl and drizzle this over the rice; mix well.
  8. Add your meat/ prawns back into the wok as well as the carrots and green beans, cook for a few minutes.
  9. Add the scrambled eggs back into the wok with the spring onions, toss and mix well.
  10. Season with salt and white pepper, taste and adjust seasoning as required
  11. Transfer to a serving dish and serve to pipe hot with your favourite chilli sauce
