OVEN ROASTED GARLICKY TOMATOES, TORN MOZZARELLA, PARMA HAM AND PESTO

Such a crowd pleaser! This made the most wonderful sharing appetiser! Dipping crusty bread into those sweet roasted garlicky vine cherry tomatoes, mixed with melty mozzarella, herby pesto and salty Parma ham. A match made in heaven…. JUST DIVINE!!

OVEN ROASTED GARLICKY TOMATOES, TORN MOZZARELLA, PARMA HAM AND PESTO

Ingredients

  • 24 cherry tomatoes on the vine
  • 2 garlic cloves, crushed
  • 40ml olive oil
  • 250g Buffalo mozzarella, torn into pieces
  • A few dollops of pesto (store bought or homemade)
  • 4 sliced Parma ham torn in half lengthwise
  • Sea salt, fresh ground black pepper, crushed red chilli flakes
  • 1 tbsp crispy fried onions, store bought (optional)

Instructions

1. Pre-heat oven to 180C
2. In an oven proof dish arrange the cherry tomatoes, scatter over the garlic and drizzle in the olive oil. Season with a little salt and pepper, then roast the tomatoes in the oven for about 20 minutes or until just starting to blister
3. Remove from the oven and dot the buffalo mozzarella around the dish, spoon over the pesto and add the Parma ham. Season again with the desired amount of salt, pepper and chilli flakes, then sprinkle over the crispy onions. Return to the oven for another 5-10 mins until the mozzarella becomes a little melty and the Parma ham starts to crisp
4. Enjoy immediately with lots of crusty bread!
