A simple but very delicious salad for you today! The skin of the aubergine gets smoky and charred while the flesh is soft and juicy, the za’atar makes it nutty and tangy, then a creaminess from the drizzled garlicky spiced tahini sauce… perfect for an alfresco summer spread.
This tahini dressing is really delicious and so versatile, great on salads, roast cauliflower, butternut squash and even in shawarmas. Topping the charred aubergine with my tahini dressing and pomegranate seeds gives it a fabulous Middle Eastern flavour too!
