This dish is by far the most requested Punjabi Mama makes. These masala wings are the perfect appetiser with a drink before dinner… packed with flavour.. a must-try!

Shockingly easy to make using just a handful of ingredients, one of which is a ready-made spice masala mix… Punjabi Mama secret ingredient for so many of her dishes.  This Shan @shanfoods Stew/ Dopiaza Masala spice mix is available in Asian supermarkets and on Amazon. It’s worth stocking up on a few because I know if you make this once, you’ll make it again so many times!

Punjabi Mamas Masala Spiced Chicken Wings

Ingredients

  • 2kg Chicken wing niblets, skinned
  • 400g Plain yoghurt (not greek)
  • 1.5 tbsp Ginger minced
  • 1.5 tbsp Garlic crushed
  • 1 packet Shan Stew Dopiaza Masala Mix
  • 2 tbsp Dried fenugreek (kasoori methi)
  • 1/2 Lemon juiced
  • 1 Large handful chopped fresh coriander
  • Ketchup
  • 2 tbsp Cooking oil
  • 1 tsp Sea salt

Instructions

  1. In a large wok on high heat, add the yoghurt, ginger, garlic and chicken wings, sauté for a few minutes.
  2. Turn the heat down to medium and cook for 20 minutes covered with a lid
  3. Remove the lid and add the Shan Stew Masala mix, fenugreek, lemon juice, ketchup and oil
  4. Increase the heat to medium-high and “bhuno” the wings, which means slow cook them for about 20 minutes until there is no liquid and the oil has separated 
  5. Add the fresh coriander
  6. Serve hot and enjoy with roti or salad. Enjoy!
