A little Saturday indulgence for you guys… hot, juicy, garlicky, herby, butter prawns that are bursting with flavour… one of the easiest most scrumptious and “gourmet” looking meals ever!  

I always have a bag of frozen shelled prawns in my freezer from Costco and this is one of those dishes I can so easily whip up last minute.  I like to get some crusty baguette and serve this dish family style in the middle of the table so everyone can get dunking, alternatively serve over some linguini for a quick pasta of dreams.

CHILLI GARLIC BUTTER PRAWNS

Ingredients

  • 24 Large prawns, shelled but tail on
  • 8 Large garlic cloves, crushed
  • 100g Butter, softened
  • 2 tbsp Parsley, chopped fresh
  • 0.5 Lemon, juiced and zest finely chopped
  • 0.5 tsp Crushed red chilli flakes
  • Sea salt flakes and freshly ground black pepper

Instructions

  1. Pre-heat oven to 220C
  2. To butterfly the prawns, use a serrated knife to slice through the back of the prawns from the head to tail, remove the vein and open the prawns up to flatten out the body
  3. Arrange the prawns in an oven proof dish
  4. Add the softened butter to a bowl and with all the other ingredients and mix together well, taste and adjust the seasoning as desired
  5. Add equal amounts of the butter mix into each prawn and place in the oven until the prawns are cooked through, turn pink and the butter all melts, about 7-8 mins
  6. Enjoy with lots of crusty bread to dip into the garlicky butter!
