Garlicky halloumi cooked to perfection with a golden crispy crust on the outside and a gooey centre that melts in your mouth… along with a generous dollop of creamy guac that balances out the richness of the halloumi. For an exciting crunch I’ve also added some fried sweet corn kernels which take this burger to a whole new level!

Ingredients
- Olive oil
- 2 Corn ears, kernels removed
- 250g block Halloumi cheese, cut into 8 slices
- 4 cloves garlic, crushed
- .
- GUAC
- 2 Avocados cut into small squares
- 1 tomato deseeded and diced small
- 2 Spring onions chopped fine
- Handful coriander chopped
- 1 Chilli chopped fine
- 1 Lime juiced
- Sea salt & black pepper to taste

- TO SERVE
- 4 Brioche buns
- Handful of baby leaves
- Drizzle of balsamic or fig glaze
Instructions
1. Air fry, shallow fry or roast the corn kernels with a little olive oil and salt until crispy and starting to colour, set aside
2. For the guacamole, mix all ingredients in a bowl, taste and adjust seasoning to your liking, set aside
3. Mix together the halloumi slices, crushed garlic and a drizzle of olive oil, air fry for 8 mins or until crisp at 200C. Alternatively pan fry the halloumi with a little olive oil until both the halloumi and garlic are crispy
4. Toast the brioche buns, slather with guac followed by some baby leaves, crispy halloumi and garlic
5. Drizzle with the balsamic glaze, then scatter over the corn kernels
6. Devour and enjoy!
