Melty brie with sweet truffle honey and crunchy pecans… this was a huge hit at my Christmas party on Saturday!
I’ve served this when entertaining so many times in so many different ways, it makes a great sharing party appetiser which literally takes minutes to put together. The maple roasted nuts give a gorgeous added texture and are spiced with cayenne pepper and salt so you get those sweet, salty, spicy, creamy flavours all together. Once it’s all bubbling and hot just sprinkle with the maple pecans and serve with your fav crackers and a spoon! Regular honey works fine here too if you don’t like truffle.

1. Preheat the oven to 180CIngredients

2. Line an oven tray with foil or parchment paper, add the pecans along with the maple syrup, cayenne pepper and salt. Bake in the oven for about 5 minutes, check to make sure they're not burning, give them a stir and once they are done remove from the oven. Taste and add a little more salt if needed, leave to cool
3. Add the Brie to a small oven proof dish, poke holes all over the top with a fork and pour over the honey, bake until melty, about 15 mins
4. Remove from the oven, sprinkle over the nuts and rosemary and serve with your fav crackers, enjoy!
