Indian Spiced BBQ Charred Lamb Chops

Beautifully charred, juicy, and tender with the perfect masala spice kick, these chops are ALWAYS a winner!!  This is one of my favorite go-to BBQ recipes when I have friends around. Everyone devours them and ends up asking for the recipe, so the last few times I made them, I carefully measured each ingredient to perfection, and now I can share it with you lovely people.  They are insanely quick to make if you have the ingredients to hand as everything is just blitzed in the food processor… I know you will thank me when you make them!

I used loin lamb chops this time as they are so meaty with an even layer of fat which, when charred, has INSANE flavor.  I know it seems strange to add mint jelly and mango chutney to the marinade, but it gives just the right amount of sticky sweetness to compliment all the spicy masalas. I also swear by the Shan Masalas @shanfoods, which you can find from your local Indian food store. 

We cooked these beauties on the Big Green Egg BBQ, starting on indirect heat and then finishing off on direct heat for the perfect char!

Ingredients

  • 16 Lamb loin chops
  • MARINADE
  • 100g Coriander with stalks
  • 2 tbsps Ginger minced
  • 2 tbsps Garlic minced
  • 125g Greek yoghurt
  • 2 tsps Salt
  • 5 tbsps Shaan Fried Chops/ Steaks masala powder
  • 3 tbsps Tandoori Paste
  • 2 tbsps Mint Jelly
  • ½ Lemon juiced
  • 6 Small green chillis
  • 2 tbsp Ketchup
  • 3 tbsps Mango chutney
  • 1 tbsp Garam masala
  • 50ml Olive oil
  • 1 Red Onion diced
  • MINT CHUTNEY
  • 50g Mint leaves
  • 50g Coriander leaves
  • 1 Small onion chopped
  • 3 Small green chillis
  • 4 Garlic cloves
  • 1 tsp Salt
  • 1 tsp Sugar
  • 4 tbsp Lemon juice

Instructions

  1. Blitz all marinade ingredients in a food processor, taste, and adjust salt or spice as desired. 
  2. Put marinade into a bowl with the lamb and mix well with your hands, so all the lamb is thoroughly coated.
  3. Leave in the fridge to marinate overnight for maximum flavour or at least 2 hours.
  4. An hour before you are ready to cook, take the lamb out of the fridge to reach room temperature.
  5. Blitz chutney ingredients in a food processor, set aside
  6. Get your BBQ ready and grill the chops until cooked through and nicely charred, be sure to char any lamb fat as it melts down and gives such an amazing flavour 
  7. Place chops on a serving dish and drizzle with mint chutney
