Smothered in the most delish, decadent peanut sauce and roasted to tender perfection this cauliflower takes just minutes to prep with the oven doing all the hard work for you…  a wonderful vegetarian main to serve as a side dish, just slice into wedges at the table. 

Bold, rich, peanuty and spicy… this delish satay sauce was kindly gifted by @omalaysia and I am in lovvvvve with it… so authentic tasting.  Honestly, this should be a staple in everyone’s pantry cupboard, I look forward to trying many more recipes with it!

SATAY ROASTED CAULIFLOWER

Ingredients

  • 1 Whole Cauliflower
  • 300ml Satay sauce OR (1 x 200g Packet @snugfood_online Peanut Sauce)
  • 150ml Water, Stock or Coconut milk
  • GARNISH: sliced spring onions, chopped coriander, sliced red chillies, sesame seeds

Instructions

  1. Pre-heat the oven to 160C/Fan
  2. If using the @snugfood_online Peanut Sauce then tip packet into a saucepan, add 60ml water and gently bring to a boil whisking continuously
  3. Cut the cauliflower stalk flat so it sits upright then pop it into a deep oven proof dish
  4. Pour the satay sauce on top of the cauliflower making sure the sauce covers the entire outside
  5. Cover the dish with foil and bake in the oven for 2 hours, basting every 20-30 mins
  6. Half an hour through cooking, add 150ml of water, stock, or coconut milk to make sure the cauliflower does not dry out
  7. Once the cauliflower is soft and cooked through it is ready
  8. Remove onto a serving dish and garnish with spring onions, coriander, red chillies and sesame seeds
  9. Enjoy hot or at room temperature
