Saag Aloo Masala Indian Potatoes and Spinach

So simple… so satisfying… this is one of my fav comfort foods, and it’s super easy to make…. potatoes with a mixture of fresh spinach and kale today, but often I use spring greens, mustard greens, or even frozen spinach if I don’t have fresh.  Perfect as a main dish, we often eat it wrapped up in a roti (double crabs!) or even as a side with a meat dish. This one is a regular in our home.

I almost always have to make double as it’s the hubby’s fav lunch the next day…  he makes a sarnie with soft bread slightly toasted, slathered with butter, then the saag aloo all mushed up and squished down in the middle… how yummy does that sound?

Ingredients

  • 500g Baby Potatoes
  • 200g Spinach – baby leaf
  • 200g Kale
  • Cooking oil
  • 2 green chillis finely chopped
  • 1 Onion cut into strips
  • 1 tbsp Ginger and Garlic Paste
  • ½ tsp Turmeric
  • 1 tsp Garam Masala
  • 1 tsp Paprika
  • 1 tsp Salt
  • Large handful of freshly chopped coriander

Instructions

  1. In a boiling water sauce, boil the potatoes until half cooked for about 5 minutes, drain, set aside.
  2. Blanch or steam kale until just softened, drain thoroughly, and set aside
  3. In a saucepan on medium-high heat with a little oil, sauté the onions, ginger, garlic, and green chillis until soft
  4. Add the turmeric, garam masala, paprika, and salt cook for a few minutes
  5. Add the potatoes to the pan and cook until just starting to colour a little 
  6. Add the kale and spinach and cook a few minutes until all combined and wilted
  7. Lower heat, continue to cook uncovered until there is no more moisture and you begin to see the oil coming up on the sides of the pan
  8. Half mash the potatoes with the back of a spoon or a masher, mix well and add the fresh coriander
  9. Serve hot as a side dish or as a main with roti/chapati
