#NationalWingDay today, guys!!… How could I possibly let the day go by without sharing these char-grilled babies with you?  Seasoned with a smoky, garlicky, spicy dry rub and left to marinate for a few hours… light up the BBQ and while grilling, they are brushed with smoky garlic butter to make them extra moist and flavourful.  

Don’t feel like sparking up the BBQ. Then you can just as easily make these under a hot grill in your oven.  

I made these a couple of weeks ago with some gorgeous spices kindly gifted to me from the lovely @bartingredients.  You need to check out their new BBQ range of spices… they have some amazing stuff!

I drizzled the charred and crispy wings of some of my favourite Linghams Chilli Sauce @linghamsuk for an extra kick of spice…. Yesssss….Now you talkin’!!

The hubby has to have his ice-cold beer to accompany these, and I’m more of a chilled glass of vino kind of girl… what about you??

Ingredients

  • 20 Large Chicken Wings
  • DRY RUB
  • 1 tbsp Garlic Granules
  • 2 tbsp Chicken Seasoning
  • 1 tbsp Smoky BBQ Seasoning
  • 0.5 tbsp Barbacoa Salt
  • 0.5 tsp Chilli Flakes
  • 1 tbsp Onion granules
  • 1 tsp Sea salt flakes
  • 0.5 tsp Coarse ground black pepper
  • SMOKY GARLIC BUTTER
  • 100g Butter
  • 8 Garlic Cloves crushed
  • 1 tbsp Smoky BBQ Seasoning
  • 0.5 tsp Barbacoa Salt (if using salted butter, you can omit this)
  • OPTIONAL: Wood smoke chips for the BBQ, Drizzle of your favourite chilli sauce

Instructions

  1. Add all the dry rub ingredients to a pestle and mortar and crush a fine powder, set aside.
  2. Slit each chicken wings with a small sharp knife a few times and then coat the wings completely with the dry rub, leave to marinate for as long as possible, preferably overnight
  3. Pre-heat the grill in the oven or fire up the BBQ until hot
  4. In a small saucepan melt all the ingredients together for the garlic butter and simmer for a few minutes, set aside
  5. Grill the chicken wings for 25-30 mins basting the butter all over regularly using a brush until they are nicely charred and cooked through
  6. Enjoy hot with a drizzle of your favourite chilli sauce!
