I have this thing for peanut butter; I can’t get enough of it. This spicy peanut sauce goes to infinity and beyond. You can use it on pretty much anything, and it would make it taste better.

This is one of the quickest noodle dishes you could ever whip up.. the soba noodles take 5 mins to cook, and they are made of buckwheat, so super healthy. Change it up, use any veggies you fancy, and substitute chicken with tofu to make it vegan.

Chicken Soba Noodle Salad With Spicy Peanut Sauce

Ingredients

  • 2 cooked chicken breasts shredded
  • 250g soba noodles, I used Yukata @yukatanews from @ocadouk
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 carrot
  • 1/8 red cabbage
  • 2 spring onions
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 1/4 cup peanut butter
  • 2/3 cup water
  • 4 tbsp soya sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1/2 red chilli or more if you like it spicy
  • 4 tsp sesame oil
  • Large handful of coriander, chopped
  • Sesame seeds to garnish

Instructions

1. Cook noodles to packet instructions, rinse under cold water, and drizzle with 2 tsp of the sesame oil
2. Slice all veg as thin as you can to resemble noodles
3. Blitz all remaining ingredients to form a sauce, not runny but not thick either. The sauce should coat the noodles and make them creamy but not be watery
4. Mix noodles, sauce, veg, and coriander really well
5. Sprinkle with sesame seeds and serve at room temperature
