I have this thing for peanut butter; I can’t get enough of it. This spicy peanut sauce goes to infinity and beyond. You can use it on pretty much anything, and it would make it taste better.
This is one of the quickest noodle dishes you could ever whip up.. the soba noodles take 5 mins to cook, and they are made of buckwheat, so super healthy. Change it up, use any veggies you fancy, and substitute chicken with tofu to make it vegan.

1. Cook noodles to packet instructions, rinse under cold water, and drizzle with 2 tsp of the sesame oilIngredients

2. Slice all veg as thin as you can to resemble noodles
3. Blitz all remaining ingredients to form a sauce, not runny but not thick either. The sauce should coat the noodles and make them creamy but not be watery
4. Mix noodles, sauce, veg, and coriander really well
5. Sprinkle with sesame seeds and serve at room temperature
