Baked Feta Pasta Soup

You may have spotted a in recent weeks, a recipe trend for Feta Pasta Soup has gone viral – initiating from TikTok, the dish has taken the internet by storm!

I’m going to be showing you how you can create this trending dish easily at home, for four people for under £10.00 using @KnorrUK’s flavourful Chicken Stock Cubes.

Trust me, this is a recipe you will be making on repeat… it is ridiculously easy, so creamy and bursting with freshness.

Baked Feta Pasta Soup

Ingredients

  • 3 Knorr’s Chicken Stock cubes (2 to dissolve into water, 1/2 on top of feta, 1/2 in gremolata)
  • 800g Cherry tomatoes
  • 4 Garlic cloves, crushed
  • 2 Small leeks, sliced into thin rounds
  • Olive oil
  • 1 Block feta cheese
  • 1 tsp Crushed red chilli flakes
  • Black pepper
  • 300g Pasta of choice (I used Cappelletti)
  • .
  • GREMOLATA (optional)
  • 10g Parsley, chopped fine
  • 10g Basil, chopped fine
  • 2 Garlic cloves, grated
  • 2 Lemons, zest only, chopped fine
  • 1 tbsp Olive oil

Instructions

  1. Preheat the oven to 200°C
  2. In a baking dish add the cherry tomatoes, garlic and leeks, drizzle with 50ml of olive oil and toss until well combined
  3. Place the block of feta in the middle of the dish surrounded by the tomatoes, drizzle with 2 tbsp of olive oil and season with chilli flakes and black pepper
  4. Using a fork break up 1/2 of a Knorr’s Chicken Stock cube and add it to the top of the feta
  5. Bake in the preheated oven for 30-35 minutes until the tomatoes are bursting and the feta is melty
  6. To make the gremolata, add all the ingredients to a small dish along with  1/2 of a Knorr’s Chicken Stock cube and mix well, set aside
  7. In a saucepan dissolve 2 Knorr’s Chicken Stock cubes in 2 litres of boiling water
  8. Once the tomatoes and feta in the oven are ready, pour the contents into the stock and stir to combine
  9. Add the pasta and leave to simmer and cook on medium heat until the pasta is cooked and the sauce has thickened slightly
  10. Ladle into serving bowls, serve hot with the gremolata dotted on top and more crushed red chilli flakes
  11. Enjoy!
