Bacon lattice, double cheesy hash browns, caramelised onion sausages and a double frittata with spinach, mushroom, peppers and onions.  Served up with a side of baked beans and chilli sauce… OH, HELL YEAH!!

Essentially this is a fry up in cake form… 🤣.  We had friends stay for the weekend, and I prepared this ‘bonkers dish’ as one of them called it on Saturday, then on Sunday just popped it in the oven to re-heat and crisp up the bacon.  Voila!… I had brunch on the table for 8 people in half an hour.  

Serve with baked beans, ketchup, chilli sauce, or whatever condiment takes your fancy.

Ingredients

  • 5 Medium Potatoes
  • 200g Parmesan cheese grated
  • Sea salt
  • Black pepper
  • Cooking oil
  • 12 Sausages – I used caramelised onion
  • 12 eggs
  • 120ml Milk of choice – I used oat milk
  • 100g Mushrooms
  • 1 Red pepper
  • 1 Red onion
  • 200g Spinach
  • 36 slices of bacon

Instructions

  1. Pre-heat oven to 180℃ 
  2. Start preparing the bacon lattice directly on your oven tray. I used the online guide from Taste of Home.  (Google Taste of Home bacon lattice For step by step instructions) I did need to use toothpicks to secure the ends in places 
  3. Half cook the bacon lattice making sure it is still pliable, drain off any fat, set aside to cool.
  4. Cook sausages per packet instructions and slice into 1 cm thick rounds, set aside
  5. Grate the potatoes, rinse in a colander to take out the excess starch, and lay flat on kitchen towels to dry
  6. Once potatoes are dry, add the cheese, 1 tsp salt, and 1 tsp pepper and mix well. Divide mixture into two.
  7. Grease a springform cake tin well and place it inside a frying pan with a little oil on medium heat.
  8. Press one half of the potato mixture down into the tin to make a giant hash brown
  9. Remove the cake tin once it is shaped and cook until crisp on one side, flip carefully with 2 spatulas, cook the hash brown on the other side until golden and cooked through, and lay on kitchen paper to cool.
  10. Repeat with the other hash brown
  11. In a bowl, whisk together the eggs and milk, add salt and pepper to taste, set aside.
  12. In a saucepan with a little oil on medium-high heat, sauté the red onion and red pepper for a few minutes, add mushrooms and spinach and sauté until spinach is wilted mushrooms are cooked through.  Remove into a bowl and set aside.
  13. Grease the same cake tin again and place inside the frying pan with a little oil on medium heat
  14. This bit can get tricky, so if you someone to help you, it may make it easier!  Place half the vegetables into the cake tin and pour in half the egg mixture to press firmly down on the cake tin, so the egg does not leak out the bottom.  You need the egg to set well at the bottom before moving the pan to the oven to set the top.
  15. Place the frying pan in the oven for a few minutes to finish cooking, remove carefully by sliding a knife around the outer edge, repeat with the remaining egg and vegetables, set aside.
  16. Now it is time to layer your cake!  Using the same springform cake tin, grease the inside well. Carefully lift the bacon lattice and place it inside the tin. This will be the top of the cake as you will flip it over once cooked properly, making sure it is even and flat, with the pretty side facing downwards.  Any extra lift over the sides to tuck over the top once filled.
  17. Carefully place a layer of frittata over the bacon, next place one hash brown on top, press down to make sure there are no gaps.
  18. Next, layer the sausages all over so the entire hash brown is covered, and you have a full sausage layer, press down firmly and then repeat with another frittata and hash brown.  Press down again and finally lift over any excess bacon to cover as much as possible. This will be the bottom of the cake, so don’t worry if it is not entirely covered.
  19. The moment of truth has come!!  On an oven tray, carefully flip the cake tin over and release it, so the middle of the bacon lattice is on top of the cake and cook in the oven until the bacon has crisped up and everything is piping hot.
  20. Lift onto a serving dish and serve immediately by slicing up like a cake
  21. Serve with baked beans, ketchup, chilli sauce, or whatever condiment takes your fancy!
