Happy New Year, lovely people!  After a couple of weeks off IG and quality family time, I’m fully recharged and ready to go with some fabulous new content.  The last few weeks have been overindulgence for many, and so here’s a healthy and delish one for you and your fam to enjoy.  This, my friends, is not just brekkie or brunch… I would happily eat this for dinner too with some sautéed potatoes or crusty bread.  I am Parsi, after all, and Parsi’s have an egg fetish… 🤣 we eat eggs on top of just about everything and for every meal too!

Onions and leeks are sautéed with kale and cavolo nero, lots of garlic because I can’t make anything without garlic, fresh parsley, mint, coriander, ground spices of cumin and coriander then finished off with some zingy za’atar, cooling yogurt, and a kick of heat with some chili flakes.  How perfect does that sound?

Ingredients

  • Olive Oil
  • 4 Eggs
  • 1 Onion chopped fine
  • ½ Leek sliced fine
  • 2 Large handfuls of Kale chopped
  • 2 Large Handfuls Cavolo Nero chopped
  • 6 Garlic cloves minced
  • 15g parsley chopped fine
  • 15g Coriander chopped fine
  • 15g Mint chopped fine
  • ½ tsp Cumin ground
  • ½ tsp Coriander ground
  • 2 tbsps Za’atar
  • 4 tbsps Yogurt
  • Chilli flakes to taste

Instructions

  1. Heat 2 tbsps of olive oil in a large skillet over medium heat
  2. Add the onions and leeks, sauté until tender for about 5 minutes
  3. Add the garlic and ground spices and sauté another minute
  4. Add the greens and all the herbs, season with salt and pepper and sauté until cooked down, about 5 minutes
  5. Reduce the heat to medium-low and make four indentations in the greens mixture
  6. Crack an egg into each, then cover the skillet and cook until the egg whites are just set but yolks are still runny
  7. Turn off the heat, dot with yoghurt and za’atar 
  8. Add more salt, pepper, and chilli flakes to taste
  9. Serve immediately
