These wonton tacos were an absolute HIT!!  I love yuzu ponzu sauce (I used @clearspringuk) just bursting with umami.. the tangy yuzu citrus with soy and rice vinegar went so well with the incredible lobster, I was ecstatic they turned out exactly as I was hoping!  

The quality of both the salmon and the lobster from @fishtoyourdoor was outstanding.

The salmon sashimi tartar (those that follow my page) will know it’s my absolute fav and so I just had to Make these with salmon too!

Ingredients

  • WONTON TACOS
  • 18 Wonton wrappers
  • Oil for frying
  • LOBSTER
  • 100g Cooked Lobster meat diced small
  • 4 tbsp Japanese mayonnaise – I used the Kewpie brand
  • 1 tbsp Garlic chives finely chopped
  • 3 tbsps Yuzu ponzu sauce
  • ½ Fresh mango diced small
  • Microgreens
  • Squeeze of lemon
  • SALMON TARTAR
  • 100g Sashimi quality salmon diced small –
  • ½ Avocado diced small
  • 2 tbsp Soya sauce
  • 1 tsp Sesame oil
  • 1 tbsp Garlic Chives finely chopped
  • 4 tbsps Japanese Mayonnaise – I used the Kewpie brand
  • 1 tsp Furikake
  • 1 tsp Sriracha
  • 1 tsp Salmon roe
  • Sesame seeds for garnish

Instructions

METHOD WONTONS

  1. Cut wonton wrappers into a circular shape
  2. Fry individually in hot oil until just about to crisp
  3. As soon as you remove the wonton wrapper from the oil, use some tongs and the back of a wooden spoon to shape into tacos, set aside to cool

METHOD LOBSTER

  1. Mix all lobster ingredients in a bowl except microgreens
  2. Place a few microgreens inside wonton taco, top with a lobster mix
  3. Serve immediately

METHOD SALMON

  1. Mix all salmon ingredients in a bowl except microgreens
  2. Place a few microgreens inside wonton taco, top with salmon sashimi mix, dot with salmon roe, and garnish with sesame seeds
