Need some Sunday brunch into?  How about these gorgeously indulgent chili cheese toasts made on toasted sliced brioche bread… spicy, salty, and sweet oozing with 2 types of cheese mixed with green and red chillis, fresh coriander, chopped spring onions, and the secret ingredient for maximum fluffiness and texture… eggs!!

Why did the luvly @sonasfoodjournal and I do an Instagram live for chili cheese toasts??  We both posted pics of these beauts on stories and were blown away at how many of you asked for the recipe!  Literally, the easiest and most delicious cheese toasties EVERRRRR… this time topped with masala beans, recipe below… add a fried egg on top if you want to be extra naughty… 🤤

Pimped Up Chilli Cheese Toast With Masala Beans

Ingredients

  • 6 Slices Brioche Bread
  • 200g Red Vintage Fox or Red Leicester Cheese, grated coarsely
  • 100g Sharp Cheddar Cheese, grated coarsely
  • 6 Spring Onions chopped in thin rounds
  • 1 Handful Coriander chopped
  • 2 Red and 2 Green Chillis mixed, chopped fine (deseeded for less spice)
  • 2 Eggs, beaten
  • Salt & Pepper to taste
  • MASALA BEANS
  • 1 Onion chopped fine
  • Olive Oil
  • 1 Tin 420g Heinz Baked Beans
  • 0.5 tsp Ginger & Garlic paste (mixed chopped fine)
  • 0.5 tsp Ground Cumin
  • 0.5 tsp Chilli Powder
  • 0.5 tsp Garam Masala
  • Pinch Turmeric

Instructions

  1. Preheat oven grill/ broiler
  2. Place brioche slices on a lined oven tray and toast both sides until golden
  3. Mix both kinds of cheese, spring onions, coriander, chillis, and beaten egg in a bowl. Use your hands to mix everything thoroughly
  4. Season with salt and pepper
  5. Using your hands again, scoop 1/6 of the mix onto a toasted brioche slice and press down firmly. Get the cheese all the way to the edges.
  6. Continue with all the toasts and place in the oven under the grill until golden and bubbling, about 5-7 minutes.
  7. TO MAKE MASALA BEANS: A small saucepan, sauté onion, ginger, and garlic in a little olive oil on medium heat.
  8. Add the spices and cook for a minute.
  9. Add the baked beans and heat through, turn the heat down and simmer for 5 minutes until all the flavours develop.
  10. Place cheese toasts on serving plates and top with masala beans and a fried egg for extra indulgence!  Enjoy!
