Have you frozen hash browns? Campbell’s tinned soup? This doesn’t sound like a Zar’s Kitchen recipe now, does it… 🤣  Presenting Parsi Mama’s LEGENDARY potato casserole… always a staple on my holiday table… ALWAYS requested by all friends and fam (you can thank me for the recipe finally 😍)…. soooooo insanely creamy and next level cheesy… super quick to throw together and just the most comforting side dish to compliment your roast EVER!!  

Recipe originated from my Aunt… Mama adapted it slightly… I then packed in more spice and garlic, of course… TRUST ME… add this one to your holiday table, and it will become a new family favourite! 😍

Potato Casserole With A Cheesy Crunchy Topping

Ingredients

  • 1250g Frozen hash browns, defrosted (I used @mccaineukie)
  • 2 Onions, chopped fine
  • 50g Melted butter
  • 160g Sour cream
  • 2 x cans Campbell's cream of mushroom soup (295g/each)
  • 1 x can Campbells cream of chicken soup (295g/each)
  • 4 tsp Salt
  • 1 tsp Pepper, fine ground
  • 3 tsp Granulated garlic
  • 1 tsp Chilli powder (@ramanspiceuk)
  • 1 tbsp Chilli sauce of choice (I used @linghamsuk hot)
  • 1 tbsp Vegetable umami or concentrated stock (I used @youdu.uk)
  • 300g Cheddar cheese, grated
  • 120g Cornflakes, crushed

Instructions

  1. Pre-heat the oven to 200C, grease a heavy-based casserole dish well with butter
  2. In a large bowl, crumble the hash browns with your hands
  3. Add the chopped onions, melted butter, soup, salt, pepper, garlic, chilli powder, chilli sauce and vegetable umami to the hash browns
  4. Mix everything until well combined and tip the contents into the greased casserole dish, smooth and flatten with a spatula
  5. Top with the grated cheese all over the top, then evenly sprinkle the crushed cornflakes over the cheese
  6. Bake for 1 hour until golden and bubbling. If the top is starting to burn, cover loosely with foil
  7. Remove and let stand for 10 minutes before serving
  8. Enjoy!
