So simple… so satisfying… this is one of my fav comfort foods, and it’s super easy to make…. potatoes with a mixture of fresh spinach and kale today, but often I use spring greens, mustard greens, or even frozen spinach if I don’t have fresh. Perfect as a main dish, we often eat it wrapped up in a roti (double crabs!) or even as a side with a meat dish. This one is a regular in our home.
I almost always have to make double as it’s the hubby’s fav lunch the next day… he makes a sarnie with soft bread slightly toasted, slathered with butter, then the saag aloo all mushed up and squished down in the middle… how yummy does that sound?
