This is my kind of Saturday night in pure comfort food, super garlicky pasta with a proper kick of chili, prawns, and chorizo, heavenly. This sauce becomes beautifully thick and creamy without cheese, cream or butter added.  So perfect for slurping up along with a large glass of vino!🍷

Ingredients

  • 2 echelon shallots chopped fine
  • 8 garlic cloves chopped fine
  • 400g tomatoes – I used mixed colour cherry tomatoes
  • 400g spaghetti – I used @garofalo wholewheat
  • 4 tbsps Tomato purée
  • 300g passata
  • 1 tsp sugar
  • 2 tbsp sherry or red wine vinegar
  • 120ml white wine
  • 400g cooking chorizo
  • 12 shelled tiger prawns with tails (optional – for the top)
  • 150g raw peeled, peeled prawns
  • Small handful parsley chopped
  • Salt, pepper and chilli flakes

Instructions

  1. Sauté shallots and garlic on med heat until translucent
  2. Add wine, cook 3 mins
  3. Add passata, tomato paste, tomatoes, sugar, and vinegar, boil, then simmer and cook 30 mins until sauce reduces. Consistency should be thick. Adding pasta water later will loosen it up again.
  4. In a separate pan with 1 tbsp oil, sauté chorizo until cooked and slightly coloured, remove, drain, set aside.
  5. Remove excess oil leave 1 tbsp, sauté prawns in the same pan, set aside
  6. Cook pasta, drain, reserve 1 cup pasta water
  7. Increase the heat of the sauce, add chorizo, prawns without tails, and parsley, reserving some for garnish
  8. Slowly add pasta water to desired consistency 
  9. Season salt, pepper, chilli flakes
  10. Arrange pasta bowls, top with king prawns
  11. Garnish with chopped parsley, drizzle with olive oil
