What I love about these little crispy bites is firstly that they are NOT FRIED and that you can literally use up whatever veggies you have lingering at the back of your fridge…. the grated sweet potato balances out the spices so beautifully.
I tried both air-frying and baking, the air-fried ones came out a fraction crispier but honestly not much difference. They really are the perfect snack… I literally can’t stop eating them!!
1. Add all the vegetables to a large bowl with the ginger, garlic, coriander, garam masala, chilli powder, cumin, coriander powder, paprika, salt, pepper and chillisIngredients

2. Mix everything well and squeeze the mix slightly to release any moisture
3. Add the gram flour and corn flour to the bowl, then add a few tablespoons of water to make it into a stiff dough
4. Pre-heat the air fryer to 200C, line with parchment paper. Alternatively pre-heat the oven to 200C and line an oven tray with parchment paper
5. Take a small handful of the mix and squeeze it into a flat round disc shape, make sure the veggies are sticking to each other, if not add a little more water
6. Air-fry the pakoras with a few sprays of oil, in batches for about 4 mins on each side until golden and crispy, keep them warm in a low oven as you go. If oven cooking, cook for about 20 mins or until golden and crisp
7. Serve immediately with chilli yogurt
8. Enjoy!
