Insanely quick to make and ridiculously delicious, too, these tofu satays are the perfect veggie/ vegan dinner party appetiser or a quick snack.  These packets of sesame smoked tofu are a lifesaver for me. I always have a few in the fridge to use as a meat alternative for so many different dishes from stir-fries, curries, noodle bowls, summer rolls.. the options are endless!

Griddled Smoked Tofu Satays With Spicy Peanut Sauce

Ingredients

  • 400g smoked tofu - I used 2 packets @taifuntofu
  • Cooking oil
  • GARNISH: Spring Onions sliced into thin rounds, toasted sesame seeds, sliced red chillis
  • SPICY PEANUT DRESSING
  • 180g peanut butter - I used @manilife deep roast crunchy
  • 60ml rice vinegar
  • 80ml soya sauce
  • 1 tbsp brown sugar
  • 1 cm knob fresh ginger
  • 2 cloves garlic
  • 1/2 red chilli or more if you like it spicy
  • 2-4 tbsp water - adjust depending on your desired consistency

Instructions

  1. Cut tofu into bite-size cubes and skewer onto wooden skewers
  2. Heat a griddle pan or BBQ until hot
  3. Brush the skewers with a little bit of oil and then grill until slightly charred
  4. Blitz all dressing ingredients in a food processor until it forms a runny consistency.
  5. Arrange satay skewers on a serving plate, drizzle with peanut sauce and garnish with spring onions, toasted sesame seeds and red chillis
