Spicy Thai Baked Tom Yum Fish

It’s amazing how quick this is to prepare with so few ingredients, resulting in a restaurant-quality dish. It’s one of those one-pot wonders which means less washing up, and it’s effortless to prepare to result in the most satisfying cozy bowl of comfort served with piping hot Jasmine rice.

We all get cravings for this dish in our house. It’s perfect for whipping up last minute for a super quick dinner. You really can’t go wrong with it too, as it’s so simple.

Why make your own Tom Yum paste? Readily available in supermarkets, it comes in a little glass jar which is so packed with the flavors of Thailand.. lemongrass, galangal, shallots, fish sauce, kaffir lime, and chili… don’t wait too long to try it because once you do I promise it will be a regular for you too!

Spicy Thai Baked Tom Yum Fish

Ingredients

  • 3 tbsps Tom Yum paste – more if you like it spicy
  • 240ml Water
  • 6 Cod fillets, skinned and boneless
  • Plain flour for dusting on fish
  • Salt & pepper
  • Olive oil
  • 6 Tomatoes, chopped small with juices
  • 100g Coriander, chopped
  • 6 Spring onions, sliced in thin rounds

Instructions

  1. Pre-heat oven to 180°C
  2. Mix the Tom Yum paste with water to make a saucy-paste
  3. Put the fish in a baking dish, dust lightly with flour, season with salt and peer and drizzle with olive oil
  4. Bake in the oven for 10 minutes
  5. Pour 1/3 of the sauce on the fish
  6. Add half the tomatoes, coriander, and spring onions all over the fish and put 1/3 more of the sauce on top.
  7. Top with the rest of the tomatoes, coriander and spring onions, and remaining sauce
  8. Bake in the oven for 40-45 minutes until hot and bubbling
  9. Serve with steaming hot jasmine rice
