Chilli Paneer Stuffed Baby Peppers

Chilli Paneer is an Indo-Chinese starter found in India where cubes of paneer cheese are fried until crisp then mixed with a spicy, vinegary chili sauce and peppers.  I have put my twist on the dish by stuffing baby peppers with the paneer, but you can use normal-sized peppers either stuffed or dice them and stir fry with the paneer the sauce the traditional way.

Ingredients

  • 1 Bag of mini peppers or 4 large peppers
  • 500g Paneer in small cubes
  • 4 tbsp Plain flour
  • ½ tsp Salt
  • Cooking oil
  • 2 Onions
  • 3 tsps minced garlic
  • 2 tsps minced ginger
  • 4 green chillis finely chopped with seeds
  • 5 tbsp Soya sauce
  • 5 tbsp Ketchup
  • 3 tsps Chilli sauce
  • 1 tbsp White vinegar
  • 1 tsp Chilli powder
  • 1½ tsps Salt
  • 1 tsp ground black pepper
  • 1 cup chopped coriander
  • 1 tbsp Tomato paste
  • 2 tbsps Cornflour mixed with half cup water

Instructions

  1. Carefully cut tops of peppers, remove core and seeds
  2. Brush with oil, season with salt and pepper, grill until charred but firm enough to hold its shape, set aside
  3. Put flour and 1/2 tsp salt in a bowl, gradually mix in a little water to make a paste
  4. Add paneer coating generously 
  5. Heat 4 tbsp oil in a pan on med-high heat, add paneer, fry until golden and crisp, set aside.
  6. In pan heat 1tbsp oil, add ginger, garlic, chillis, and onions, cook until onions translucent.
  7. Add remaining sauce ingredients except for cornflour mixture, boil
  8. Add cornflour to thicken
  9. Taste, adjust salt, chilli, vinegar, or ketchup to your liking
  10. Mix the crisp paneer into the sauce, heat through
  11. Stuff the ready grilled peppers with the paneer and serve hot
