These soup noodles are the ultimate comforting slurpy hot chili bowl of deliciousness you could ever want.  Also, one of the quickest meals ever to make, you can change the noodles, the veg, the toppings to whatever you have as long as you follow the broth instructions it’s so versatile.

Udon Noodles with Spicy Gochujang Soup

Ingredients

  • 250g Frozen udon noodles – I used @yutaka premium frozen noodles
  • 1 litre chicken or vegetable stock
  • 1 tsp minced garlic
  • 1 tsp Minced ginger
  • 4 Spring onions, sliced in rounds
  • 3 Small red chillis sliced thin rounds
  • 3 tbsps Gochujang paste
  • 10 g Dried sliced shiitake mushrooms – or fresh if you prefer added in with the veg
  • 2 tbsp Soya sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 cup cabbage shredded
  • 8 Baby corn sliced in half
  • 100g Choi sum
  • 2 eggs soft boiled, peeled
  • 100g Smoked tofu – I used @taifuntofu
  • Sesame seeds for garnish
  • Crispy fried onions for garnish

Instructions

  1. Soak shiitake mushrooms in enough warm water to cover them for 20 mins
  2. In a pan on medium heat, sauté the garlic, ginger, spring onions, and chilli for a minute until just starting to colour
  3. Add corn and cabbage, sauté another minute
  4. Add mushrooms with soaking liquid to the pan
  5. Add stock, gochujang paste, soy, rice vinegar, and sesame oil
  6. Add noodles and Choi sum, bring to boil, simmer 5 mins
  7. Taste and adjust sauces to your liking
  8. Cut tofu into strips, slice eggs in half
  9. Dish up, top with soft boiled eggs and tofu, garnish with sesame seeds and crispy fried onions.
