Garlicky Crispy Charred Octopus

Charring octopus on the BBQ has to be my fav way to eat it, so smokey and crispy with charred edges but still so tender on the inside then bathed in a dressing of olive oil, garlic, lemon, smoked paprika, parsley, and shallots… just so divine with crusty bread to mop up all that deliciousness!

Do you look at octopus and think it will taste overly fishy?  It doesn’t and has a mild oceanic flavour with a kind of springy texture similar to squid. Some people are intimidated by cooking octopus at home, but don’t be scared to make it yourself… especially now that it’s so easily available, already steamed, and is such a delicious, quick, healthy dish to prepare in literally 30 minutes.

Ingredients

  • MARINADE
  • 450g Steamed Octopus tentacles
  • 50ml EVOO Olive Oil
  • 4 Garlic cloves crushed
  • ½ Lemon juiced
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 2 tbsp parsley chopped fine
  • DRESSING
  • 150ml EVOO Olive oil
  • 2 Shallots – medium echelon
  • ½ Lemon juiced
  • 1 Garlic cloves
  • 1 tsp Salt
  • 1 tsp Spanish Sweet Smoked Paprika
  • Garnish with parsley and lemon wedges

Instructions

  1. Whisk the marinade ingredients in a bowl, add the octopus and marinate in the fridge for at least 2 hours
  2. Fire up the BBQ or heat a griddle pan and sear the octopus for a few minutes until nicely charred, constantly basting with the marinade
  3. Transfer to a chopping board and set aside to cool slightly
  4. Whisk together the dressing ingredients, set aside
  5. Cut the octopus into pieces leaving some of the charred tentacle tips slightly longer to garnish the top
  6. Mix the octopus into the dressing until well combined
  7. Arrange in a serving plate and garnish with chopped parsley and lemon wedge
