Did you know ‘Cinco de Mayo’ on the 5th of May is a huge celebration day in Mexico? This year it falls on a Tuesday.. loving twice the reason to celebrate Taco Tuesday today, right??

These stunning fish tacos will blow your mind with their flavour explosions! It may look like a lot of elements, but they are super easy to make.

Ingredients

  • 600g halibut - or any firm white fish fillet
  • 16 small soft corn tortillas @coolchilico
  • 1/2 small red cabbage finely sliced
  • 3 tbsp white wine vinegar
  • MEXICAN RUB
  • 1 tbsp each: dark brown sugar, sea salt, ground cumin, chilli powder
  • 1 tsp each: onion granules, garlic granules, cayenne pepper, hot smoked paprika
  • SPICY GUACAMOLE:
  • 4 avocados mashed chunky
  • 2 tomatoes, chopped
  • 1 bunch coriander leaves chopped
  • 1 red chilli, finely sliced
  • 1 lime juiced
  • 1/2 lemon juiced
  • Sea salt & pepper to taste
  • MAD MANGO SALSA
  • 1 ripe mango, cubed small
  • 1/2 red onion, finely chopped
  • 1/2 cucumber, finely chopped
  • 1 bunch coriander leaves chopped
  • 1 lime, juiced
  • Sea salt to taste

Instructions

1. Oil your BBQ grills, put on med direct heat with a drip tray, or heat your oven grill
2. Mix cabbage and vinegar, set aside
3. Rinse, drain, dry fish and rub with Mexican rub
4. Mix guacamole ingredients, chunky consistency, set aside
5. Mix salsa ingredients, set aside
6. Cook fish 2 mins each side or until cooked through, longer depending on thickness
7. Heat tortillas on BBQ or grill pan
8. Flake fish into big chunks
9. Assemble tacos with fish, guacamole, and salsa
