CRISPY SPICY SALT & PEPPER SQUID WITH GARLIC & CHILLI

Deep-fried to golden perfection, mixed with crispy garlic, chilli and spring onions… this plate was so good it was demolished in seconds!! 

#AD/GIFTED I used the spicy salt and pepper blend from Pureety, which I was kindly gifted. The flavours were perfect for squid. I loved this blend and can’t wait to try it with more dishes… available on @pureetyathome website, link in their bio.  

If you can’t get a hold of this spice blend, I have included an alternative you can make at home yourself.

Crispy Spicy Salt & Pepper Squid With Garlic & Chili

Ingredients

  • 12 Squid Tubes, cleaned and cut into 1/2 cm rings. If you have any tentacles, keep them whole
  • 3 Red chillis sliced fine
  • 16 Garlic cloves crushed
  • 10 Spring onions cut into 1” strips
  • 1 tbsp Pureety Spicy salt & pepper Mix
  • Oil for frying
  • BATTER
  • 70g All-purpose flour
  • 2 tbsp Cornflour
  • 2 tbsp Japanese Mayonnaise 
  • 240ml Ice cold water
  • FLOUR MIX
  • 3 tbsp Pureety Spicy salt & pepper Mix @pureetyathome
  • 70g All-purpose flour
  • ALTERNATIVE SPICE MIX
  • 1 tsp Cayenne pepper
  • 1 tsp sweet paprika
  • 1 tbsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. In a saucepan with a good glug of oil, fry the garlic for a few minutes, add the spring onions, red chillis and spice mix, cook until the garlic becomes golden and crispy, remove from the heat and set aside.
  2. Mix the batter ingredients and whisk vigorously. The batter must stay cold. If you feel the temperature is dropping, you can keep the bowl on top of a larger bowl of ice.
  3. In a wok, start to heat about 5cm of oil to 180°C
  4. While the oil is heating, sift the flour and spice mix into a large bowl
  5. Dredge each squid tube ring in the flour mix first
  6. Coat each ring in batter and let the excess drip off
  7. Place one ring at a time in the hot oil
  8. Each piece will take a couple of minutes. Turn if. Turned, so you get an even golden crisp coating on both sides, place squid rings on kitchen towels to drain excess oil. 
  9. Repeat with the remaining pieces
  10. Add the fried squid to the garlic and chilli mix and mix well
  11. Arrange on a serving platter, enjoy while still hot and crispy!
