MISO TAHINI ROAST CHICKEN

A MAGICAL marinade for chicken… simply 6 ingredients mixed into a bowl which create the most flavourful paste… lather it all over chicken and veg then oven cook until the chicken is juicy and tender on the inside and gorgeously golden and crisp on the outside… just HEAVENLY!!

MISO TAHINI ROAST CHICKEN

Ingredients

  • 130g White miso paste
  • 2 tbsp Tahini
  • 2 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 tbsp Chilli sauce
  • 1 tbsp Sesame oil
  • 1 Whole large chicken
  • .
  • VEGGIES FOR BOTTOM OF TRAY (optional - use any veggies you like)
  • 200g Baby peppers, whole
  • 1 Sweetheart Cabbage, cut into wedges
  • 250g Tenderstem Broccoli, whole

Instructions

1. Pre-heat the oven to 200°C
2. Add the marinade ingredients to a bowl, white miso paste, tahini, honey, rice vinegar, chilli sauce and sesame oil. Mix thoroughly to form a paste like consistency
3. Pop whichever vegetables you are using in the bottom of a roasting tin and place the chicken on top.
4. Pour the paste over the chicken and vegetables, massage the paste into the chicken making sure to rub it into all the crevices
5. Leave in the fridge to marinate for a couple of hours if you have time
6. Roast the chicken and veggies in the oven for 60-75 minutes or until the internal temperature is 165°F and the juices run clear
7. If the veggies are done earlier you can remove them from the roasting tin and set aside until the chicken is ready
8. Remove the chicken and rest covered with foil for 10 minutes
9. Carve and serve with your favourite sides
