Flip over the crunchy golden pastry revealing that oozy, spicy, Bombay sandwich filling inside, lashings of spicy green chutney, red onions, tomatoes, potatoes and cheese… damn these were good!!

I succumbed to the viral TikTok hack but put my own spin on it… what do you think?

BOMBAY SANDWICH PUFF

Ingredients

  • Olive oil
  • Sprinkle of Sea salt
  • Sprinkle of Chaat masala
  • 1 Red onion, sliced thin
  • 1 Tomato, sliced thin
  • 4 New potatoes
  • 80g Grated cheese
  • 1 Puff pastry sheet @jus_rol, thawed and cut into 6
  • 6 tbsp Green chutney (for homemade use recipe link below)
  • 1 Egg, beaten

Instructions

1. Steam or boil the new potatoes until tender, about 25 mins, cut into 0.5 cm slices, set aside
2. Preheat the oven to 200℃, prepare 2 oven trays with parchment paper
3. To prepare the filling evenly place the ingredients in a mound onto the parchment paper
4. Start with a little olive oil, sea salt, chaat masala and red onions, mix and create 6 little heaps of filling
5. Top each mound with the tomatoes, the a little grated cheese, potatoes, more cheese and chaat masala
6. Take a pasty square and spread 1 tablespoon of chutney over the top roughly big enough to cover the filling, cover chutney side facing down, each mound of the filling with a square
7. Press the edges down to seal and crimp with a fork
8. Brush the tops with egg wash and bake in the oven for 15 mins or until golden
9. Remove from the oven, flip over to reveal your gorgeous upside down Bombay sandwich
10. Serve immediately and enjoy!
