ZAR’S SPAGHETTI BOLOGNESE

Everyone needs the ultimate Bolognese Sauce in their repertoire and this is mine!  Rich, hearty and exploding with complex flavours and is on your table in less than one hour and most of that time is slowly simmering on the stove!  

I love using this Bolognese Sauce with spaghetti, or any other fav pasta, I also use it to make lasagna, tacos, etc. This is one dinner that is requested on repeat so I always batch cook loads and freeze for a quick meal!

ZAR’S SPAGHETTI BOLOGNESE

Ingredients

  • 1 onion, peeled
  • 4 garlic cloves, crushed
  • 1 carrot, peeled
  • 1 green pepper, deseeded
  • 2 tbsp Nduja paste (optional)
  • 500g minced beef
  • 2 tins crushed tomatoes
  • 2 tbsp tomato purée
  • 1 Knorr beef stock pot OR a dash of Maggie liquid seasoning OR Worcestershire sauce
  • 2 tbsp mixed herbs
  • Drizzle of balsamic glaze
  • Sea salt and black pepper
  • Sprinkle of chopped parsley and Parmesan cheese
  • *If not using Nduja can sub with a few crushed red chilli flakes for a spicy kick*

Instructions

1. Cut the carrot, onion and pepper into large pieces and blitz in the food processor until chopped fine
2. In a saucepan over medium heat cook the onions and garlic for a few minutes, then add the carrot and green pepper and cook until soft
3. Add the Nduja, cook for a minute then add the minced beef, continue to sauté the beef until cooked through
4. Tip in the crushed tomatoes, tomato purée and Knorr stock pot,
5. Then add the mixed herbs, a drizzle of balsamic glaze and season with salt and pepper, stir to combine everything together
6. Cover with a lid and leave to simmer for 30 mins
7. Serve with spaghetti and a splash of the pasta water to loosen the bolognese
8. Enjoy with a sprinkling of chopped parsley and lots of grated Parmesan cheese!
