5 ingredients only!  What?  Yup.. just 5 ingredients to make this crazy delicious sharing appetizer.  This Brindisa goat’s cheese has a paprika-covered rind which adds such a lovely hint of flavor. It’s popped in the oven to bake on top of the contents of a jar of Brindisa’s pepper & tomato frittata sauce and finally topped with candied pancetta…. gooey cheesy deliciousness!

Ingredients

  • 1 Brindisa Luna Roja (Raw) Paprika Covered Goats Cheese
  • 1 Jar Brindisa Fritada Pepper & Tomato Sauce
  • 80g Diced Pancetta
  • 1.5 tbsp Sugar
  • Drizzle of Date, Fig or Balsamic Glaze
  • Brindisa Savoury Ship’s EVOO Biscuits

Instructions

  1. Preheat oven to 200°C degrees
  2. Place a jar of Brindisa Fritada Peppers in the bottom of a small ovenproof dish and pop the goat's cheese on top.
  3. Bake until the inside is melted and gooey, about 15-20 minutes
  4. Cook the pancetta in a small saucepan until all the fat is rendered and the pancetta is crisp, drain on paper towels, and set aside
  5. Clean the fat from the pan and place the pancetta back in the pan on medium heat
  6. Add the brown sugar and 2 tbsp of water 
  7. Cook until brown sugar is melted and the sticky mixture has coated all of the pancetta. Keep stirring so nothing burns. Add another tbsp of water if needed.
  8. When goats cheese is ready and the sauce is bubbling, please remove it from the oven and top with the candied pecans.
  9. Drizzle with the balsamic glaze and serve immediately with Brindisa EVOO biscuits
  10. Enjoy!
