These heavenly cups give you a sushi fix without expertly rolling sushi or needing sashimi grade fish… even better that they only take 10 mins prep and 15 mins to cook.. BRILLIANT!!  

My spicy mayo turned out divine made with my favourite @linghamsuk Extra Hot Chilli Sauce, the nori gets all gorgeously crispy when baked and the final grill on the salmon gives it a beautiful char.

BAKED SALMON SUSHI CUPS

Ingredients

  • 250g Sushi rice, cooked according to packet instructions
  • 2 tbsp Rice vinegar
  • 4 tbsp Mayonnaise
  • 1 tbsp Sesame oil
  • 1 tbsp Soya sauce
  • 1.5 tbsp Linghams Extra Hot Chilli Sauce (alternatively 3 tbsp original or garlic chilli sauce)
  • 3 Nori sheets, cut into quarters
  • 400g Salmon, cut into 1cm cubes
  • GARNISH: Spring onions, furikake or toasted sesame seeds, crispy fried onions
  • EQUIPMENT: 12 hole muffin tin

Instructions

1. Pre-heat the oven to 200C
2. Place cooked, hot sushi rice in a wooden bowl and season with sushi rice vinegar, mix and cover with a damp tea towel
3. Place the mayonnaise, sesame oil, soya sauce and Linghams Extra Hot Chilli Sauce in a bowl and mix
4. Add the salmon cubes to the bowl and combine everything together
5. Add a heaped tablespoon of rice to the matt side of the nori square and place it into one of the muffin tin holes, repeat until the muffin tin is full
6. Equally distribute the salmon cubes into each cup on top of the rice
7. Bake in the oven for 15 minutes, you can turn your grill/ broiler on for the last couple of minutes to get some colour on the salmon
8. Garnish with spring onions, furikake or toasted sesame seeds and crispy onions
9. Enjoy!
