Oh yes… the spice rub on this one was the perfect combination… I smoked low and slow with garlic powder, onion powder, brown sugar, salt, and pepper.  It had a kick of heat from the pepper and was so packed with flavour from the smokiness of the hickory and oak wood chips and the garlic and onion seasoning.  The smokey smells coming out of the @biggreenegg BBQ were unreal!  

I served this beautiful brisket with homemade ultimate garlic bread, a creamed horseradish sauce, a match made in heaven.

Ingredients

  • 1.5 kg Beef brisket
  • 20g Salt
  • 20g Pepper
  • 20g Brown Sugar
  • 20g Garlic Powder
  • 20g Onion Powder

Instructions

  1. Remove silver skin and excess fat from the brisket 
  2. Season brisket from all sides with marinade
  3. Leave to rest for 1 hour to get to room temperature
  4. Get BBQ ready for indirect cooking to smoke low and slow at a constant temperature of 110℃ 
  5. Add the wood chips for smoking. We used a mixture of Oak and Hickory
  6. Place meat on the grills fat side up and use a drip pan underneath to collect the drippings
  7. Cook meat on the BBQ until the internal temperature is 92℃  which for a 1.5kg brisket will take about 3 hours give-or-take depending on the thickness of it
  8. Remove the meat from the grills and leave it to rest in foil for 1 hour
  9. Slice and serve immediately with your favourite mustard or horseradish sauce
