Trust me. It’s so worth buying the few odd ingredients you may not have in your pantry to make this tandoori chicken.

Mr Singhs Punjabi Pesto (I love that name as I’m married to a Mr Singh 😂) @mrsinghssauce is available in the UK, available to order from their website. Just click the link in their bio. It contains onion, ginger, garlic, tomatoes and spices. It works great to add to dishes for a rich base, and I love it in my marinade for this chicken. Not in the UK and need a substitute? I would say fry onion till brown and blitz with a cup of passata and another tsp of garam masala.

We grilled these on the Big Green Egg @biggreenegguk BBQ, which gave the incredible smokey char, but I have made these many times in the oven under the grill, and they come out delicious!

Ingredients

  • 15 chicken thigh fillets
  • 1 cup greek yoghurt
  • 2 tbsp fresh chillis chopped fine (green or red, I mixed them both)
  • Half jar tandoori paste
  • 1 tsp tandoori powder
  • 1 tsp chicken seasoning
  • 4 tbsp ketchup
  • 2 tbsp crushed garlic
  • 1 tbsp chilli oil
  • 1 tbsp garlic oil
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 jar Mr Singhs Punjabi pesto

Instructions

1. Make 3-4 small cuts in each chicken thigh
2. Mix all ingredients and marinate for at least 2 hours or overnight
3. Get your bbq or grill ready
4. Remove excess marinade from chicken but keep a little on there
5. Grill for about 10 minutes on each side or until cooked through and charred
6. Serve with grilled onions and lemon wedges
