Broad beans are in season right now, so if you get some, why not try making these falafels? They are the perfect mid-week dinner!  Beautifully crisp on the outside and soft and fluffy on the inside, just bursting with flavor. The broad beans give the falafels a creamy texture, and the chickpeas have a nutty flavor which combined is just gorgeous.

The kids devoured them in flatbreads with homemade tzatziki, tahini sauce, and salad. My daughter said they were the yummiest meatballs ever 🤦🏽‍♀️… little did she know they were packed full of green goodness… ha.

Broad Bean Falafels With Tzatziki and Tahini Sauce

Ingredients

  • FALAFELS
  • 1 200g packet OddPods Chickpeas or 200g Tinned Chickpeas
  • 250g Shelled Broad beans – about 1kg of whole pods
  • Small handful parsley chopped
  • Small handful coriander chopped with stems
  • 6 cloves garlic crushed
  • 1 Onion
  • 6 Spring onions
  • 1 tsp Dried mint
  • 1 tsp Cumin powder
  • 2 tsps Coriander powder
  • 2 tbsp Gram flour, possibly more
  • Chilli flakes to taste
  • 2 tsps Sea salt
  • Pepper
  • TZATZIKI
  • 250g yoghurt
  • 2 Small cucumbers, seeds removed, cut into small squares
  • 6 Mint leaves, rolled into a cigar shape, cut fine
  • 1 Clove garlic minced
  • ½ Lemon juiced
  • Salt, pepper
  • TAHINI DRIZZLE
  • 3 tbsp Tahini
  • 3 tbsp Lemon juice
  • 1 Garlic clove crushed
  • ½ tsp Salt
  • Pepper
  • Splash of water
  • ACCOMPANIMENTS – OPTIONAL
  • Flatbreads
  • Sliced tomatoes
  • Sliced cucumber
  • Gherkins or Lebanese pickles
  • Pickled green chillis
  • Micro herbs or bay leaves
  • Radish
  • Chilli Sauce

Instructions

  1. Remove pods from broad beans.
  2. Boil in salted water for 5 minutes, drain, set aside to cool
  3. Peel the pods by squeezing the ends until the bean pops out the end
  4. In a food processor, blitz together broad beans and chickpeas until smooth, remove into a large bowl, and set aside 
  5. Now blitz all remaining ingredients for falafels in the food processor until paste forms and add to chickpea and broad beans. Give it all a good mix with your hands
  6. If the mixture feels a bit dry, add a little water. If it feels too wet, you can add some more gram flour
  7. Taste the mix to check if you would like to add salt, pepper, chilli flakes and adjust to your liking
  8. Roll the mixture into desired size balls and lay onto a tray ready for frying, set aside
  9. Mix all ingredients for tzatziki in a bowl, set aside
  10. Mix all ingredients for tahini sauce in a bowl, add water to desired consistency, set aside
  11. Heat oil in a pan to shallow fry the falafels
  12. Fry the falafel balls in batches, setting the cooked falafels to drain on kitchen paper towels
  13. Serve warm falafels in flatbread with tzatziki, drizzled with tahini sauce, and topped with accompaniments of your choice.
