Broad beans are in season right now, so if you get some, why not try making these falafels? They are the perfect mid-week dinner! Beautifully crisp on the outside and soft and fluffy on the inside, just bursting with flavor. The broad beans give the falafels a creamy texture, and the chickpeas have a nutty flavor which combined is just gorgeous.
The kids devoured them in flatbreads with homemade tzatziki, tahini sauce, and salad. My daughter said they were the yummiest meatballs ever 🤦🏽♀️… little did she know they were packed full of green goodness… ha.
