INSANELY GOOD.  This really is a burger you want to try… trust me.. you’ll make it once, and it will become one of your favorites. It’s a regular meal for us and always loved by the whole family.  We eat them most often without the brioche bun, just a salad or veggies on the side, and lashings of Sriracha chili sauce.  It makes a great alternative to the beef burger and also has a ton of hidden veggies!

The secret to the moistest, most succulent burger is mincing the chicken yourself and using a mix of both thigh and breast meat.  The salty feta and slivered sweet fried onions with the charred sesame seed crusting give this burger so much flavor.

Ingredients

  • 2 chicken breasts – about 200g
  • 6 Chicken thighs – about 400g
  • 200g Spinach
  • 150g Spring greens or kale
  • 250g Feta cheese
  • 4 Spring onions
  • 200g Fresh breadcrumbs
  • 1 tbsp Garlic powder
  • 1 egg white
  • 50g Sesame seeds
  • 2 Onions sliced thin and fried until golden
  • Large handful parsley chopped
  • Coconut oil for cooking
  • Sea salt
  • Freshly ground black pepper

Instructions

  1. Pre-heat oven to 180°C
  2. Blanch spring greens or kale for 3 minutes in boiling water and then add the spinach for 1 minute, drain, squeeze and roughly chop
  3. In a food processor, blitz the chicken breast and chicken thighs to a mince
  4. Add breadcrumbs, egg white, salt, and pepper, and blitz until combined
  5. Transfer mixture to a bowl and add all other ingredients except sesame seeds and oil. Mix well until everything combined
  6. Put sesame seeds on a plate
  7. Shape chicken mix into desired burger shape and press into sesame seeds
  8. Heat a little oil in a pan on medium heat and fry the patties until slightly charred
  9. Transfer to a baking tray in the oven until cooked through, about 10 minutes
  10. Serve with a salad, vegetables, or brioche bun with lettuce, tomato, mayonnaise, and ketchup.  I like mine with lashings of chilli sauce.
