This fresh smoked salmon salad is made with cucumber, crunchy radishes, sweet tomatoes, creamy truffle cheese, drizzled in dill, lemon, honey and mustard dressing for a delicious Christmas dish.

Ingredients

  • 1 Ryvita thin, multi-seed flatbread @ryvitauk
  • 140g Baby leaf salad
  • 26 Smoked salmon slices
  • 2 Small cucumbers, ribboned with a vegetable peeler to make 10-12 rolls
  • 10 Radishes, sliced thin
  • 10 Cherry tomatoes cut small, yellow and red
  • 1 tbsp capers
  • 4 Lemon slices, cut into very thin rounds
  • 150g Truffle Pastura Cheese, cut into small cubes @brindisaspanishfoods
  • 3 Snowflake shaped cheeses @marksandspencerfoodpr
  • Garnish: Pickled red onions, Dill sprigs, Dried cranberries, Freshly ground black pepper
  • DRESSING
  • 3 tbsp Olive oil @colive.oil
  • 2 tbsp Lemon juice
  • 2 tbsp fresh dill
  • 1 tsp Mustard
  • 2 tsp Honey
  • Sea salt and black pepper

Instructions

  1. Place the dressing ingredients in a jar with a lid, shake and set aside
  2. Using a large board or tray as your base, place the Ryvita thin along the bottom centre
  3. Layout, the baby, leaves in a triangular shape above the Ryvita
  4. On another board, start curling up two smoked salmon slices to make a rose shape, repeat with all the slices
  5. Roll up the cucumber ribbons and fan them out on the edges slightly
  6. Arrange eight salmon roses and cucumber ribbons alternately along the bottom of the salad leaves to form the broad base of the tree
  7. Add a layer of radish slices above
  8. Make a slit and half a lemon slice and curl the portion to create a long twisty shape. Add the lemon twists above the radishes.
  9. Add a gap above the lemon twists and then repeat with rows of salmon roses, cucumber rolls, radish slices and lemon twists.
  10. Fill in the gaps with the diced cheese and cherry tomatoes
  11. Add a caper and dill spring inside each salmon rose and scatter some pickled red onions
  12. Place the cheese snowflake at the top of the tree and two more around either side of the base
  13. Scatter the dried cranberries around the board and finish with more dill sprigs and a few twists of fresh black pepper
  14. Serve with the dressing on the side
