RAINBOW CARROT & PARSNIP XMAS TREE, WALNUT CORIANDER PESTO

What a fun and festive way to serve your veggies this Xmas!!  

This board was made simply by roasting the carrots, parsnips and Brussels sprouts in the oven then arranging them into a X’mas tree shape… I topped the veggies with some caramelised shallots which I roasted with the sprouts and also a homemade walnut and coriander pesto… so delish and what a table centrepiece!!

RAINBOW CARROT & PARSNIP XMAS TREE, WALNUT CORIANDER PESTO

Ingredients

  • 500g Parsnips, peeled
  • 500g Rainbow carrots, peeled @natoora
  • 3 Shallots, peeled and sliced into quarters
  • Olive oil
  • Sea salt flakes and black pepper
  • CORIANDER WALNUT PESTO
  • 30g Coriander leaves and stems
  • 80g Spinach leaves
  • 2 Garlic cloves, crushed
  • Large handful walnuts, dry toasted @walnuts_uk
  • 50g Parmesan cheese, grated
  • 120ml Extra virgin olive oil + more if desired
  • 1 tsp Sea salt flakes
  • 0.5 tsp Black pepper
  • 1/4 Pomegranate, seeded

Instructions

  1. Preheat oven to 190 C fan
  2. Lay the carrots, parsnips, Brussels sprouts and shallots in a single layer on oven trays, drizzle with oil, season with salt and pepper
  3. Roast until the carrots and parsnips are cooked through and the sprouts and shallots are slightly charred and crispy. If you have several veggies on the same try then keep an eye on them as they will have different cooking times
  4. Blitz all the pesto ingredients in a food processor until combined, add more oil to your desired consistency (there will be extra so pop it in the freezer until you want to use it again… try it over pasta, in sarnies or loosen with more oil and use as a salad dressing!)
  5. Arrange the veggies into a festive Xmas tree, decorate with the pesto and the pomegranate
  6. Serve immediately and enjoy!
