This stuff disappears in our house because whenever I make a batch my friends take half of it!!  Finally sharing this legendary recipe with you guys…

We use it soooo many ways.. some ideas below…

  1. Fish – wrap in foil with chutney and bake or BBQ
  2. BBQ meats or paneer, mix a few spoonfuls into marinades – next level!
  3. Mix with yogurt – ultimate kebab sauce
  4. In sarnies – specifically cheese & chutney or Bombay sandwiches 
  5. Mix with hummus – as a crudité dip (Don’t knock it till you try it…we are hooked!!)

PUNJABI CORIANDER CHUTNEY

Ingredients

  • 2 Large onions, roughly chopped
  • 1 Green apple, peeled, cored and roughly chopped
  • 60g Green finger chillis (not the small crazy spicy ones!)
  • A splash of water
  • 85g Fresh coconut, chopped small
  • 200g Fresh coriander with stems
  • 300g Fresh mint leaves
  • 2 tbsp Sugar or maple syrup
  • 1.5 tbp Sea salt
  • 90ml Lemon juice

Instructions

1. In a blender, add the onions, apple and green chillis, blitz until a paste forms, add a splash of water to help it all to blend
2. Add the remaining ingredients and blitz again, add a little more water to your desired consistency
3. Taste and adjust salt, sugar, chilli to your liking
4. Enjoy!
