Unbelievable, these are baked with skin this crispy!  Lip-smackingly delish… such simple ingredients and just bursting with flavour.  This has to be one of the easiest and tastiest meals I have made in a long time… here you go… TRUST ME… try it and thank me later! 😉

Crispy Baked Lemongrass Chicken

Ingredients

  • 12 Chicken Thigh fillets with skin
  • 3 tbsp finely chopped lemongrass
  • 6 Spring Onions chopped finely
  • 3 tsp Fish sauce
  • 1 tsp Sambal Oelek (or your choice of chilli sauce)
  • 1 tsp Brown sugar
  • 2 tbsp Baking powder (not baking soda)
  • 1 tbsp Oil

Instructions

1. Preheat the oven to 180C/320F and place a rack on a large baking tray.
2. Dry the thighs with paper towels, then place in a large bowl with all the ingredients
3. Place the chicken in a single layer on the rack, skin side up
4. Cook in the oven for about 35 minutes. After 20 minutes, rotate the tray for even cooking
5. Cook until golden and crispy
6. Enjoy!
