CURRY LEAF GARLIC BUTTER

The most flavourful and ADDICTIVE butter EVERRRRR!!!… I’ve shared this one before, and I am sharing it again because it’s just that DAMNNNN GOOD!!!!

If you have a stash of this butter in the freezer…. let me tell you peeps… dinner can be prepped in 5 minutes. I have used it in soooo many ways from simply slathering onto veggies, potatoes, fish or chicken… last Christmas, I even injected and basted my turkey with it.

It’s so versatile and packed with insane flavour… sometimes I leave out the garlic and just slather on toast for brekkie… it’s divine in scrambled eggs too!!

CURRY LEAF GARLIC BUTTER

Ingredients

  • 10 Stems of Curry leaves, leaves only
  • 500g Butter, unsalted
  • 12 cloves Garlic, minced
  • 2 tbsp Sea salt flakes
  • 1 tsp Black pepper
  • 1 tsp Chilli powder

Instructions

1. Grease a frying pan on low heat with a little butter, tip in the curry leaves and cook them until they are crisp, about 5 mins
2. Transfer the leaves onto kitchen paper and scrunch them up until they are completely crumbled
3. Add the crumbled curry leaves to softened butter with the garlic, chilli powder, sea salt and black pepper, mix well
4. Place the butter onto a piece of waxed or parchment paper
5. Shape it into a log and wrap up tight with the paper, then refrigerate (or freeze) until set
6. Slice off portions to use and enjoy!
