I am no longer an air-fryer virgin, guys!!  SALTER UK kindly gifted me this incredible new Aerogrill with five cooking functions, and I am genuinely blown away.  I couldn’t believe that I used only one tbsp of oil to make this crispy masala tilapia, and it did turn out crispy!

So far, I’ve tried just 1 of the incredible five cooking functions, including a grill function, air fry mode, cook using little to no oil, a roast setting, and a bake function for sweet treats, and a dehydrate mode for dried fruit snacks… I can’t wait to experiment more with it.  It was so easy to use with the digital touch display for selecting which cooking function and temperature you need; it also looks super stylish on my kitchen counter!

I am not sure why it has taken me so long to get on the air fryer bandwagon… In hindsight, I wish I had bought one age ago.

Ingredients

  • 4 Tilapia fillets skinned
  • Oil for the Airfryer
  • 4 Wraps
  • ACCOMPANIMENT: Sliced tomatoes, cucumber and red onions, lime wedges
  • FISH MARINADE
  • 2 tsp Ginger crushed
  • 2 tsp Garlic crushed
  • One green Chilli chopped fine
  • 1/2 tsp Chilli powder
  • 1 tsp Turmeric
  • 1 tsp sweet paprika
  • 1 tsp Fennel Seeds
  • 1 tbsp Tandoori powder
  • .
  • BATTER
  • 40g Gram flour
  • 3 tbsp Corn flour
  • 1 tsp Red chilli powder
  • 1 tsp Garam masala
  • 1 Egg, lightly beaten
  • .
  • CORIANDER AND MINT CHUTNEY YOGURT
  • 50g mint leaves
  • 50g coriander leaves
  • One small red onion roughly chopped
  • Three small green chillis
  • Four garlic cloves
  • 1 tsp salt
  • 1/2 tsp sugar
  • 4 tbsp lemon juice
  • 1/2 tsp smoked paprika
  • 250g Yogurt

Instructions

  1. Mash all fish marinade ingredients together in a bowl to make a paste
  2. Place fish fillets on a plate and massage marinade into the fish; set aside in the fridge for 15 minutes
  3. Place all ingredients for the chutney (except the yoghurt) in a food processor, blitz, and remove into an airtight jar
  4. Place the yoghurt in a bowl and add 2 tbsp of the chutney, mix well and set aside
  5. The remaining chutney will keep fresh in an airtight jar in the fridge for up to 2 weeks
  6. In a bowl, mix all batter ingredients, and add a little water if needed to make a light batter-type consistency
  7. Add the fish fillets one at a time into the batter to lightly coat them all over
  8. Pre-heat the air fryer to 200C and place two battered fish pieces in a single layer in the air fryer, spray with a bit of cooking oil and cook for 10 minutes, turning the fish halfway through cooking, so you get an even golden crisp coating on both sides
  9. Place fish on kitchen towels, then repeat with the remaining pieces
  10. Serve in wraps with the chutney yoghurt, tomatoes, cucumber, sliced red onion and lime wedges
