Pimped up prawn cocktail… Made these with a bit of a Mexican twist… Avocado boats filled with fat juicy prawns, cucumber, red onions, mango, coriander, jalapeños, lime, and cayenne pepper in a spicy cocktail sauce… what’s there not to love?

Ingredients

  • 3 Avocados halved with core removed
  • 2 Mini cucumbers diced, seeds removed
  • 2 tbsps Red onion finely chopped
  • 150g Prawns cooked
  • 1 mango diced into cubes
  • A small handful of coriander chopped
  • 2 Jalapeño green chillies chopped fine
  • 2 tbsp Lime juice
  • A sprinkle of cayenne Pepper
  • Salt
  • Pepper
  • COCKTAIL SAUCE
  • 4 tbsp Mayonnaise
  • ½ tbsp Ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp Lemon juice
  • 1 tsp sherry
  • Tabasco to taste

Instructions

  1. Mix cucumber, onion, prawns, mango, coriander, green chilli, lime juice together
  2. Add salt and pepper to taste
  3. Mix cocktail sauce ingredients in a bowl
  4. Add cocktail sauce gradually to the prawn mixture to get the consistency desired. It should not be too runny.
  5. Spoon mixture into avocado boats, sprinkle with cayenne pepper, and garnish with more chopped coriander and green .chili
